Abstract:
The research aimed to determine and compare nutritive compositions in different cultivars of pecans by national standard methods, such as crude fat, protein, amino acids, fatty acids and mineral elements. The results showed that C1and C4 had higher oil content rate in five pecan cultivars, which were 710.21 g/kg and 710.31 g/kg, linoleic acid and linolenic acid were the highest in C4, accounted for 27.67% and 1.32%, respectively. C2 had the highest protein content rate, approached to 126.14 g/kg, and essential amino acids were up to 40.97 g/kg. Five pecan cultivars were also abundant in mineral elements without significance, such as Ca, K, Mg and P.
