<正>采用体外试验研究了理化因素对梅花’南京红须’花色色素颜色呈现的效应。结果表明,梅花’南京红须’花色色素在体积分数为1%浓盐酸的甲醇中呈现浓艳紫红色,在pH0～3颜色稳定,因对光、热、氧化剂、还原剂、螯合剂敏感而呈现无色、墨绿色或黄绿色,因不同金属离子及离子的不同浓度而呈现程度不同的红色、紫色、黑黄色、红中带黑或微蓝绿色;葡萄糖和低浓度苯甲酸钠几乎不影响其色泽,而蔗糖有减色作用,柠檬酸有增色作用。

In vitro experiments indicate that the flower color pigment of Prunus mume Sieb.et Zucc.’Nanjing Hongxu’(Nanjing red-bearded) is intense purple in methanol containing 1% HCl and the color is stable at pH 0～3.The pigment expresses colorless,blackish green or yellow-green because it is sensitive to light,heat,oxidant,reductant or chelating agent.It also expresses various red,purple,blackish yellow,blackish red or faint bluish green because of different metal ions or different concentrations of the ions.Glucose and low concentrated sodium beneoate almost have no effects on the pigment color.Sucrose can weaken the color,but citric acid can strengthen it.This paper could be a reference or a premise for the exploration on the flower color mechanism,the identification of the molecular structures of the anthocyanins and the exploitation and utilization of the flower color pigments of the red Mei flowers.
