植物性产品重金属污染状况及其健康风险评价

Contents of heavy metals in plant production and their health risk assessment

摘要: 植物性产品是人类食物的重要组成,植物性产品中重金属含量超标将给人类身体健康带来风险。采用ICP-MS测定了从江西瑞昌县5个不同市场采集的玉米样品中9种重金属(Cd、Cu、Pb、Cr、Zn、Ni、Al、Mn、Co)的含量,并参照国家食品卫生标准评价重金属污染状况; 利用靶标危害系数(THQ)和危害指数(HI)评价食用市售玉米对成人和儿童带来的潜在重金属健康风险。结果表明:研究区内市售玉米各重金属元素含量都远低于现行国家食品安全限值,未出现超标现象; 居民通过玉米摄入的各重金属的THQ和HI均小于1,对人体的健康风险较低; 9种重金属对成人和儿童造成的健康风险的顺序依次为Zn>Mn>Co>Cu>Ni>Pb>Cd>Al>Cr,其中重金属暴露对儿童的健康风险明显高于成年人。总体来看,研究区内市售玉米质量良好,没有明显的重金属健康伤害,但应注重对儿童摄入量的控制。

Abstract: Plant production constitutes the predominant food for human. High contents of heavy metals in plant production will result in potential risk to human health. Maize is a main grain production for human food and animal feed. This study took the maize collected from markets of Ruichang County, Jiangxi Province as the subject to measure its contents of Cd,Cu,Pb,Cr,Zn,Ni,Al,Mn and Co, assess their health risk for local inhabitants. The pollution situations of heavy metals were evaluated based on national food safety standards of China, and their potential health risk to adults and children by food ingestion were assessed by the methods of target hazard quotient(THQ)and hazard index(HI).The results showed that the contents of studied elements were all far below the current national food safety limits. Both THQ and HI values were less than 1. This indicated that health risk for humans was low through the maize consumption. The health risk for both adults and children caused by individual heavy metals was followed in the order of Zn>Mn>Co>Cu>Ni>Pb>Cd>Al>Cr. In addition, children were more sensitively affected by heavy metals from food ingestion. Overall, the quality of market maize in the studied area was good and there were no obvious health effects on humans. However, significant attentions should be paid to the consumption of maize for children.
