Comparison of nutritive compositions in different cultivars of pecans

摘要: 为了比较5个品种薄壳山核桃的品质差异,对薄壳山核桃中粗脂肪、粗蛋白、氨基酸、脂肪酸和矿物质等营养成分进行了测定。结果表明:5个品种薄壳山核桃中‘波尼’和‘绿宙一号’的粗脂肪含量较高,分别为710.21、710.31 g/kg。其中‘绿宙一号’的亚油酸、亚麻酸含量最高,分别占总脂肪酸含量的27.67%、1.32%; 品种‘莫汉克’的粗蛋白含量最高,达到126.14 g/kg,必需氨基酸总量也最高,达到40.97 g/kg; 各品种Ca、K、Mg和P等矿质元素含量丰富,品种间差异不显著。

Abstract: The research aimed to determine and compare nutritive compositions in different cultivars of pecans by national standard methods, such as crude fat, protein, amino acids, fatty acids and mineral elements. The results showed that C1and C4 had higher oil content rate in five pecan cultivars, which were 710.21 g/kg and 710.31 g/kg, linoleic acid and linolenic acid were the highest in C4, accounted for 27.67% and 1.32%, respectively. C2 had the highest protein content rate, approached to 126.14 g/kg, and essential amino acids were up to 40.97 g/kg. Five pecan cultivars were also abundant in mineral elements without significance, such as Ca, K, Mg and P.
