The Analysis of Nutrient Substances in 34 Common Almond Seeds at Home and Abroad

Abstract: Protein、fatty acid、amygadalin、VE and mineral element in common almond fruit were analyzed and determinated in this paper.The results showed those 34 almond seeds contained abundant nutrients,in which the average content of protein was 28.7% and unsaturated fatty acid was 92.5% mainly made of oleic acid 71.8% and linoleic acid 20.7%,the average content of VE was 236.3 μg/g ranging from 138.2 μg/g to 351.5 μg/g.Most of almond contained amygadalin 47.7~275.1 μg/g.The mean value of mineral element per 100 g element was respectively potassium 552 mg,calcium 308 mg,magnesium 288.8 mg,phosphorus 500 mg,copper 1.16 mg,iron 5.1 mg,zinc 3.8 mg.It indicated almond has a high economic value.
